Murungai keerai poriyal is from the traditional South Indian kitchen. To make drumstick leaves stir fry, just splutter the mustard seeds, urad dal, curry leaves, crushed red chilli, chopped onion in oil and stir fry with moringa leaves and grated coconut. RECIPE FOR DRUMSTICK LEAVES STIR FRY | MURUNGAI KEERAI PORIYAL

INGREDIENTS
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1/2 tsp hing / asafoetida
- 1 spring curry leaves
- 2-3 red chilli
- 1 big onion - finely chopped
- salt as needed
- 2 cup tightly packed drumstick leaves
- 2 tbsp fresh grated coconut
PROCEDURE
- remove drumstick leaves from stalk
- wash the leaves and keep it aside
- heat oil in a cast iron wok
- add mustard seeds and allow to splutter
- add urad dal and hing, saute for few seconds
- add curry leaves and allow to turn crisp
- add red chilli and finely chopped onion
- saute well till the onions are soft and slightly brown
- add drumstick leaves
- saute in medium flame until all the moisture has absorbed
- add grated coconut and saute for a minute
- switch off the flame
- serve hot with sambar rice
- tastes great

remove drumstick leaves from stalk

add mustard seeds, allow to crackle then add urad dal and hing, saute for few seconds
add curry leaves and allow to turn crisp
add red chilli
add finely chopped onion
saute well
add salt
add roughly chopped drumstick leaves
saute well until all the moisture has absorbed
add grated coconut
saute for a minute. switch off the flame and serve
