This is my first Muffin Recipe in Muffin Archives, Banana Walnut Muffin. This is easy and simple recipe which can prepare under 30 minutes. These muffins are moist and soft and they are topped with a chopped nuts, which is super crunchy to eat. It can be served as a morning breakfast or an evening snack.
To make perfectly soft banana walnut muffins, you'll want to ensure that you combine your wet and dry ingredients just until mixed. It should be slightly lumpy. If you over mix, you'll end up with tough chewy muffins. I like to use muffin liners to make these easy to remove. RECIPE FOR BANANA WALNUT MUFFIN

INGREDIENTS
- 1 1/2 cup all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon powder
- 1/4 tsp salt
- 3 medium ripe banana
- 2/3 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup unsalted butter
- 1 cup walnuts - chopped
PROCEDURE
- preheat oven to 350 degree Fahrenheit
- line a muffin pan with paper liners
- in a mixing bowl, mix all purpose flour, baking powder, baking soda, salt and cinnamon powder
- mash the banana well
- in another mixing bowl, melt unsalted butter
- in that add sugar, vanilla extract, mashed banana and egg
- whisk well
- add all purpose flour mix
- mix well just until combined
- add chopped walnuts and mix well
- divide batter evenly over muffin cups or using an ice cream scoop
- add chopped walnut over muffin
- bake for 18-20 minutes or until a toothpick comes out clean
- serve warm
- tastes super delicious

take all purpose flour in a mixing bowl
add baking powder, baking soda, salt and cinnamon powder
mix well
take 3 medium ripe banana and mash well
in a large mixing bowl, add unsalted butter
melt the butter and add sugar
add vanilla extract
add mashed banana
add egg
whisk well
add all purpose flour mix
mix well just until combined
add chopped walnuts
mix well
line a muffin pan with paper liners
divide batter evenly over muffin cup
add chopped walnut over muffin
bake for 20 minutes or until a toothpick comes out clean
