Vegetable Pulao is a one pot rice recipe with lots of vegetables and aromatic spices. This pulao is one of the basic rice recipe often cook in many Indian homes. This veg pulao is served with plain yogurt or onion raitha. It tastes super delicious and very aromatic and it goes well with lunch box recipe also. RECIPE FOR VEGETABLE PULAO

INGREDIENTS

  • 1 cup basmati rice
  • 2 tbsp ghee + 1 tbsp oil
  • 3 cloves
  • 2 inch cinnamon stick
  • 1 bay leaf
  • 1 star anise
  • 1 mace
  • 2 cardamom
  • 1 piece stone flower
  • 1 onion -  thinly sliced
  • 3 green chilli - slitted
  • 1 tbsp ginger garlic paste
  • 2 tbsp mint leaves 
  • 1 tbsp coriander leaves
  • mix vegetables 1 cup - 1 1/2 cup (carrot, beans, peas and cauliflower)
  • salt as needed
PROCEDURE

  • wash basmati rice and soak in water for 30 minutes
  • cook basmati rice with enough water and a tsp of oil
  • once the rice is cooked, drain off the water and keep the rice aside
  • chop all the vegetables
  • if you are adding cauliflower to the pulao, cook cauliflower florets in hot water with a pinch of salt for 5 minutes, drain the water and keep the cauliflower aside
  • heat ghee in a pan or wok
  • add cloves, cinnamon stick, bay leaf, star anise, mace, cardamom and stone flower
  • saute for few seconds
  • add thinly sliced onion and green chilli
  • saute well until onion turn translucent or till it turns light brown
  • add ginger garlic paste, mint leaves and coriander leaves
  • saute well till the raw smell goes completely
  • add chopped vegetables and salt
  • cook well with 1/4 cup water
  • once all the vegetables cooked completely, add the cooked rice
  • combine well without breaking the rice
  • cover with lid and cook for 5 minutes
  • add 1 tbsp ghee on top of the rice for nice flavor
  • serve hot with raitha or papad
  • tastes yummy


Vegetable Pulao with Step-By-Step Photo Recipe


wash and soak basmati rice in water for 30 minutes



cook basmati rice with enough water and with a tsp of oil



drain the water and keep the rice aside



heat ghee in a pan or wok


add cloves, cinnamon stick, bay leaf, star anise, mace, cardamom and stone flower, saute for few seconds


add thinly sliced onion and slitted green chilli


saute well until onion turns translucent


add ginger garlic paste, mint leaves and coriander leaves


saute well until the raw smell goes completely


add chopped vegetables (cook cauliflower florets in hot water with a pinch of salt )


add salt


cook vegetables in 1/4 cup water and saute well


add cooked basmati rice


combine well without breaking the rice

add a tbsp of ghee on top of the rice, cover and cook for 5 minutes
