Mutton liver is an organ meat from goat which is very high in nutritional content. Goat liver can be fried, boiled, baked or broiled in to various savory dishes. Mutton liver is considered to be the most nutritious part of the goat/lamb. It is very rich in proteins, iron and vitamin. Iron helps oxygen transportation in the body and keeps the hemoglobin content in a normal level. The important thing is that lamb liver is high in fat content, try to avoid mutton liver who has high in cholesterol level. This recipe is easy to prepare and tastes good if you add extra pepper. RECIPE FOR MUTTON LIVER FRY

INGREDIENTS
- 1/2 pound mutton liver
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- salt to taste
- 1 tsp ginger garlic paste
- 1 1/2 cup water
- 2 tbsp oil
- 3 cloves
- 1 inch cinnamon stick
- 2 cardamom
- 1 spring curry leaves
- 1 green chilli - slitted
- 1 cup shallots - finely chopped
- 1 tsp coriander powder
- 1 tsp pepper powder
- 1 tbsp coriander leaves - chopped
PROCEDURE
- cut mutton liver into small size cubes
- clean and wash them well for 2-3 times with water and drain it in a strainer so that all blood and water drains out
- take mutton liver into small mixing bowl
- in that, add turmeric powder, red chilli powder, ginger garlic paste and salt
- mix well and rest for 30 minutes to 1 hour
- add marinated mutton liver pieces into pressure cooker
- add water and mix well
- pressure cook for 5-6 whistle, switch off the flame
- once pressure subsides naturally, keep it aside
- heat oil in a tawa/ wok
- add cloves, cinnamon stick, cardamom and curry leaves
- saute for few seconds
- add finely chopped onion and slitted green chilli
- saute well until onion turn translucent and light brown
- add cooked mutton liver pieces with stock
- add coriander powder and pepper powder
- mix well
- cover and cook in low flame for 15-20 minutes or until all the stock evaporates
- start roast in medium high flame
- once the liver have attained the dark brown color, switch off the flame
- garnish with fresh coriander leaves
- serve mutton liver as a side dish for rice

Mutton Liver Fry With Step-By-Step Photo Recipe
cut mutton liver into small size cubes and clean well
add turmeric powder, red chilli powder, salt and ginger garlic paste
mix well and rest for 1 hour
add the marinated mutton liver pieces into pressure cooker
add water
mix well
pressure cook for 5 whistle
once pressure subsides naturally, keep it aside
heat oil in a cast iron wok, add cloves, cinnamon stick and cardamom pods, saute for few seconds
add curry leaves and allowed to turn crisp
add finely chopped onion and slitted green chilli
saute well until onion turn translucent
add cooked mutton liver pieces along with stock
add coriander powder and pepper powder
mix well, cover and cook in low flame for 15 minutes or until the stock evaporates
open the lid and start roast in medium high flame
liver have attained the dark brown color
garnish with coriander leaves
