MUTTON GRAVY RECIPE | VILLAGE STYLE LAMB CURRY | SPICY AND FLAVORFUL MUTTON GRAVY
Here comes with another recipe, mutton gravy. Mutton gravy is a delicious and tasty gravy, where mutton pieces are cooked with fresh spices. Fresh spices always gives a better result than the store bough masala. Slow cook and open cook method is always healthier and tastier than the pressure cook method. in this recipe, i seasoned the mutton gravy with mustard seeds, curry leaves, fennel seeds and cumin seeds which gives super aroma and flavor to the curry. RECIPE FOR VILLAGE STYLE LAMB CURRY

INGREDIENTS
For Masala Paste :
For Masala Paste :
- 1 cardamom
- 3 cloves
- 2 inch cinnamon stick
- 1 tbsp fennel seed
- 1 tbsp cumin seed
- 3/4 tbsp coriander seed
- 1/2 tbsp pepper corn
- 1 tsp poppy seed
- 8 garlic
- 1/2 tbsp ginger
- 1/2 cup shallots
- 1 spring curry leaves
- 1/2 cup grated coconut
For Gravy :
- 500 g Mutton /Lamb
- 1 tsp crushed ginger and garlic
- 1/2 tsp turmeric powder
- salt as needed
- 1 large tomato
- 1 tbsp sambar powder
- 2-3 cup water
- 3 tbsp oil - splitted
- 1/2 tsp mutard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp fennel seeds
- 8 curry leaves
- 1/2 cup onion - finely chopped
PROCEDURE
- in a frying pan, add cardamom, cloves, cinnamon stick, cumin seeds, fennel seeds, pepper corn, poppy seeds and coriander seeds
- dry roast in low flame till they leave a nice aroma and transfer into mixer grinder
- in the same pan, add 1 tsp oil, add garlic, ginger and shallots
- roast in a low medium flame and till they become brown in color
- once onion turns color, add curry leaves and grated coconut, roast for 2 minutes and cool down completely
- grind the roasted spice ingredients first, then add the remaining ingredients and grind to a smooth paste
- in a cast iron wok, add mutton pieces, chopped tomato, crushed ginger and garlic, turmeric powder, sambar powder and salt
- add 2 cup water and mix well
- cover and cook in low flame till mutton is cooked
- now add the grinded masala paste and mix well (if need add 1 cup water)
- cover and cook in low flame or till the oil oozes out from the gravy
- in the mean while, add oil in the frying pan
- add mustard seeds and allowed to crackle
- add cumin seeds, fennel seeds, curry leaves and chopped onion
- saute well or till the onion turns brown in color
- add these seasonings into the mutton gravy
- delicious mutton gravy ready
- serve with hot steamed rice, chapathi, idli or dosa

in a frying pan, add cloves, cinnamon stick, cardamom pod, cumin seeds, fennel seeds, coriander seeds, pepper corn and poppy seeds

transfer into mixer grinder
in the same pan, add oil
add ginger, garlic and shallots
saute in medium flame or until onion turn translucent
add curry leaves and grated coconut
saute for 2 minutes and cool down completely
in the mixer grinder, grind the spices first
add the remaining ingredients in to mixer grinder
grind to a smooth paste adding little water
in a cast iron wok, add mutton pieces
add turmeric powder, crushed ginger and garlic, salt and chopped tomato
add 2 cup water and sambar powder, mix well
cover and cook in low medium flame till mutton is cooked
mutton cooked well
add grinded masala paste
mix well
cover and cook in low flame
oil oozes out from the gravy
in a frying pan, add oil
add mustard seeds and allowed to crackle
add cumin and fennel seeds
add curry leaves and chopped onion
saute well
add into top of the mutton gravy
delicious mutton gravy ready
