Sambar is a very popular South Indian recipe usually served with Idli, Dosa, Pongal, Vada Upma and steamed rice. This recipe is from South Indian cuisine and it is basically a lentil soup. Most of the times drumsticks are used to make sambar, which gives unique and distinct taste. Follow my step-by-step photo recipe to prepare drumstick sambar. RECIPE FOR DRUMSTICK SAMBAR

INGREDIENTS

- 1 1/2 cup toor dal
- 1/2 tsp turmeric powder
- 3 garlic
- 1/4 tsp hing/asafoetida
- 2 cup water
For Seasoning
- 2 - 3 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- 1/4 tsp fenugreek seeds
- 1/2 tsp cumin seeds
- 1/4 tsp hing/asafoetida
- 1 red chilli (optional)
- 1 spring curry leaves
To Make Sambar
- half a lemon size tamarind - soak in 1 cup hot water
- half cup shallots - thinly sliced
- 1 medium size tomato - chopped
- 2 drumstick - chopped
- 1/4 tsp turmeric powder
- 1 tbsp sambar powder
- salt to taste
- 1-2 tbsp coriander leaves for garnish
PROCEDURE
- soak tamarind in 1 cup hot water and extract the juice
- clean the drumstick and peel the outer skin and chop into 1-1 1/2 inch size
- clean and soak toor dal in water for 15 minutes
- in a small bowl, add soaked toor dal, 2 cup water, turmeric powder, hing and garlic
- pressure cook for 4-5 whistles and switch off the flame
- once the pressure subsides naturally, mash the dal well using hand blender or masher and keep it aside
- heat oil in a wok or tawa
- add mustard seeds, urad dal, cumin seeds, fenugreek seeds, hing and red chilli
- saute for few seconds
- add curry leaves, saute well and allowed to turn crisp
- add thinly sliced shallots, saute well till it turn translucent
- add chopped tomato and drumsticks
- saute well till tomato turn mushy
- add tamarind extract/ juice, turmeric powder, sambar powder and salt
- mix well
- cover and cook for 10 minutes or until the drumsticks are soft and tender
- add mashed toor dal and 1 cup water
- mix well
- allow to boil for 10-15 minutes in medium flame
- switch off the flame
- garnish with coriander leaves

soak tamarind in hot water
clean and soak toor dal in water for 15 minutes
add turmeric powder, garlic and hing
place it in a pressure cooker
pressure cook for 5 whistle
cooked dal
mash well using hand blender or masher
clean the drumstick and remove the outer skin
heat oil in a wok or pan
add mustard seeds, urad dal, cumin seeds, hing, fenugreek seeds and red chilli, saute for few seconds
add curry leaves and allow to turn crisp
add thinly sliced shallots
saute well until it turn translucent
add chopped tomato and drumsticks
saute well until tomatoes turn mushy
add tamarind extract
add turmeric powder, sambar powder and salt
add 1/2 cup water and mix well
cover and cook for 10 minutes or until the drumsticks are soft and tender
add mashed toor dal
add 1 cup water and mix well
allow to boil for 10-15 minutes in medium flame
switch off the flame and garnish with coriander leaves
serve hot with steamed rice and vegetable curry, tastes delicious
