A simple vegetarian delight from South Indian recipe, Cabbage Stir Fry or cabbage poriyal  cooked with basic seasonings like onion, green chilli and topped with freshly grated coconut. This recipe is so simple and easy to prepare in under 20 minutes and tastes excellent. Cabbage has excellent source of Vitamin C and K, good source of fiber and it has anti cancer properties. RECIPE FOR CABBAGE STIR FRY

INGREDIENTS
  • 3 cup chopped cabbage
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp urad dal
  • 1/4 tsp hing/asafoetida
  • 1 spring curry leaves
  • 3 green chillies - slitted
  • 1 small size onion - finely chopped
  • salt as needed
  • 1/4 cup grated coconut

PROCEDURE
  • wash and remove the outer covering of the cabbage
  • chop cabbage in to finely small pieces or shred it
  • heat oil in a pan
  • add mustard seeds, when it splutter add urad dal and hing
  • when urad dal changes color add curry leaves and allowed to turn crisp
  • add slitted green chillies and finely chopped onion
  • saute well until onion turn translucent
  • add salt
  • add finely chopped cabbage
  • combine well with the seasonings
  • cover and cook in low flame (stir at regular intervals), sprinkle some water to prevent it from getting burnt
  • once cabbage cooked, add grated coconut
  • mix well
  • cook for 1 minute 
  • remove from the flame
  • serve hot

Cabbage Stir Fry with Step-By-Step Photo Recipe


wash and remove the outer covering of cabbage


finely chop cabbage into small pieces


heat oil in a wok


add mustard seeds, allowed to splutter and add urad dal and hing


add curry leaves and allowed to turn crisp


add slitted green chilli and finely chopped onions


saute well until onion turn translucent


add salt


add finely chopped cabbage


combine well with the seasonings


cover and cook in low flame or until cabbage cooked completely (stir at regular intervals)


cabbage cooked


add grated coconut


mix well and cook for 1 minute

serve hot
