BADAM HALWA | STARTUP COOKING

Badam Halwa is an easy dessert or sweet that can be prepared on any festive occasion like diwali, new year, lakshmi puja etc., Halwa is a rich Indian dessert made with blanched almonds, ghee, sugar and is flavored with saffron and cardamom powder. RECIPE FOR BADAM HALWA

INGREDIENTS
  • 1/2 cup almonds
  • 1/2 cup sugar
  • 1/2 cup ghee
  • 1/2 cup milk + 2 tbsp of milk
  • pinch of cardamom powder
  • 1/8 tsp saffron strands
PROCEDURE
  • soak almonds overnight
  • almonds doubled in size
  • peel the skin 
  • add almonds to a mixer grinder, grind almonds with 1/4 cup of milk to a smooth paste
  • soak saffron strands in 2 tbsp of milk for 10 minutes, till it turns yellow color, then saffron milk ready
  • heat ghee in a nonstick pan
  • add ground almond paste
  • mix well
  • add sugar
  • mix well and cook until the sugar dissolves completely
  • add the remaining milk
  • cook on low medium heat and stir continuously
  • add the remaining ghee and saffron milk along with saffron
  • after adding saffron milk, halwa turns natural yellow color 
  • mix well
  • continue to cook on low medium flame
  • once all the ghee absorbed by the halwa, it will start leaving the sides of the pan
  • add cardamom powder
  • combine well with the halwa
  • cook for 1 minute
  • to check the right consistency of the halwa, pinch a small portion of halwa and form into a ball. the ball should be soft and smooth and not be sticky or wet
  • switch off the flame
  • garnish with saffron strands
  • cool down completely
  • store in an air tight container
  • store it for a week

Badam Halwa with Step-By-Step Photo Recipe


soak almonds in water for overnight


Almonds doubled in size

peel the skin and discard it

transfer into mixer grinder


grind to a coarse paste

add 1/4 cup milk

grind to a smooth paste


soak saffron strands in 2 tbsp of milk


after 10 minutes, saffron milk ready


heat ghee in a non-stick pan

add the almond paste


mix well

add sugar


stir well and cook until the sugar dissolves completely


add remaining milk


cook on low medium heat and stir continuously


add remaining ghee

add saffron milk


combine well and halwa turns yellow color


halwa starts leaving the sides of the pan


add cardamom powder


combine well with the halwa


cook for 1 minute

to check the right consistency of the halwa, pinch a small portion of halwa and form into a ball. the ball should be soft and smooth and not be sticky or wet
