Mutton Rogan Josh is a kashmiri delight lamb curry made with a blend of spices like fennel seeds, dry ginger powder, hing powder etc., This recipe is prepared using the slow cooking method and this slow cooking process helps the lamb extremely tender and delicious. Rogan Josh is a deep red spicy lamb or mutton dish of Kashmir by the Mughals. The dish has a thin red coloured gravy and a thick layer of ghee on top. RECIPE FOR MUTTON ROGAN JOSH

INGREDIENTS
- 600 g mutton with bone
- 3 tbsp ghee
- 3 black cardamom - crushed
- 1 mace
- 2 bay leaf
- 1/4 cup yogurt | curd (optional)
- 3 tbsp kashmiri red chilli powder
- 1 tsp green cardamom powder
- 1 tbsp fennel seed powder
- 1 tbsp dry ginger powder
- 1 tsp black pepper powder
- 1/2 tsp cinnamon powder
- 1/2 tsp cumin seed powder
- 1 tsp hing | asafoetida powder
- 1/4 tsp saffron
- 1 tsp garam masala powder
- salt as needed
PROCEDURE
- in a small mixing bowl, add yogurt | curd, kashmiri red chilli powder, fennel seed powder, black pepper powder, cumin seed powder, cinnamon powder, hing powder, green cardamom powder, dry ginger powder and saffron
- mix well and keep it aside
- heat ghee in a pan
- add black cardamom pods, bay leaf and mace
- add mutton pieces with bone
- roast well until light golden brown
- now add curd mix into the mutton
- combine well with mutton pieces
- add salt and more water
- mix well
- cover and cook in low flame for 1 hour
- after 1 hour add garam masala powder
- mix well
- cover and cook in low flame for 30 minutes or until meat falls off the bone
- serve hot with naan, chapathi or steamed rice

take yogurt | curd in mixing bowl
add kashmiri red chilli powder
add green cardamom powder
add fennel seed powder
add dry ginger powder
add pepper powder
add cumin seed powder and cinnamon powder
add hing
whisk well
add ghee in a pan
add black cardamom, mace and bay leaf, fry for a while
add mutton pieces with bone
roast well
mutton turns golden brown
add yogurt | curd mix
add salt and more water
mix well, cover and cook in low flame for 1 hour
after 1 hour, gravy look like this
add garam masala powder
mix well
cover and cook in low flame for 30 minutes
cook until meat falls off the bone
mutton rogan josh ready
serve hot with naan, chapathi or steamed rice
