RECIPE FOR CAPSICUM COCONUT GRAVY

INGREDIENTS
- 1/2 cup grated coconut
- 5 garlic clove
- 2 inch ginger piece
- 2 green chilli
- 2 tbsp cooking oil
- 1/2 tsp cumin seed
- 9-10 curry leaves
- 1 big onion - finely chopped
- 1 medium size tomato - puree
- 1/4 tsp turmeric powder
- 1 tsp sambar powder
- 1/2 tsp garam masala powder
- salt as needed
- 2 capsicum - chopped
- few coriander leaves for garnish
PROCEDURE
- finely chop onion, puree the tomatoes and chop the capsicum
- in a mixer grinder, add grated coconut, green chilli, garlic and ginger, grind to a fine paste and keep it aside.
- heat oil in a pan, add cumin seeds and curry leaves, allow cumin seeds to splutter
- add finely chopped onion and saute well till it turns golden brown
- add tomato puree, mix well and cook it turns out mushy
- add turmeric powder, sambar powder, garam masala powder and salt
- combine well with onion tomato mixture
- add chopped capsicum and mix well
- add grinded coconut paste, mix well and cook in medium flame for 3-4 minutes
- add 1/4 cup water
- continue to cook in medium flame for 5 minutes or until the gravy thickens
- garnish with coriander leaves

saute well

add chopped capsicum
mix well and cook in medium flame
add grounded coconut paste
combine well
add 1/4 cup water
cover and cook in medium flame for 5 minutes or until the gravy thickens
garnish with coriander leaves
serve with chapathi, roti or rice
