Biryani is very popular in Indian cuisine, where basmati rice is cooked with vegetables using Indian spices. I use the same recipe, but replace basmati rice with quinoa. Quinoa is gluten free, which is high in protein and it contains all nine essential amino acids. It is also high in fiber. Benefits of eating quinoa:

RECIPE FOR QUINOA BIRYANI

INGREDIENTS
- 1 cup quinoa
- 2 cloves
- 1 inch cinnamon
- 1 bay leaf
- 1 star anise
- 1 green cardamom
- 1 inch marathi bud
- small size black stone flower or kalpasi
- 1 tbsp butter/ghee
- 1 tbsp peanut oil
- 1 medium size thinly sliced onion
- 1 green chilli
- 1 tbsp ginger garlic paste
- 1 carrot (chopped)
- 8 french beans (chopped)
- 1/4 cup fresh peas
- 1 small potato (chopped)
- 1/2 cup yogurt / curd
- 1/8 tsp turmeric powder
- 1/2 tsp sambar powder
- 1/4 tsp garam masala powder
- 1/4 cup mint leaves
- 1/4 cup coriander leaves
- salt as needed
PROCEDURE
- wash quinoa in running water, drain it and keep it aside
- roughly grind the whole spices using mortar and pestle and keep it aside
- Heat butter/oil in a pressure cooker, add the whole garam masala spices
- saute for a minute
- add thinly sliced onion, saute till it turns mushy
- add ginger garlic paste and green chillies
- saute till the raw smell leaves
- add chopped vegetables and mix well
- add curd / yogurt
- add turmeric powder, sambar powder and garam masala powder
- add chopped mint leaves and coriander leaves
- combine well and cook for 2-3 minutes in low medium flame or till it drys
- add washed quinoa
- mix well
- add 2 cups of water and salt
- pressure cook for 3 whistles and keep it in the low flame for 10 minutes then switch off the flame
- now the fluffy quinoa biryani ready
- eat with raitha and a squeeze of lime
QUINOA BIRYANI STEP-BY-STEP PHOTO RECIPE
wash quinoa in running water, drain the water and keep it aside

place it in the mortar and pestle
grind to a slight coarse powder
heat butter and oil in a pressure cooker
add grounded whole spices
saute for a minute in medium flame
add thinly sliced onion
saute well
onion turns mushy
add ginger garlic paste and green chilli
saute till the raw smell leaves
add chopped vegetables (carrot, beans, potato and peas)
mix well
add curd/yogurt
add turmeric powder
add sambar powder
add garam masala powder
add chopped mint and coriander leaves
combine well
curd and vegetables combined very well
add quinoa
mix well
add 2 cups of water
add salt
mix well
pressure cook for 3 whistles and keep it in the low flame for 10 minutes then switch off the flame
delicious quinoa biryani ready
serve with onion raitha and lemon wedges
