RECIPE FOR THINAI IDLI AND DOSA

INGREDIENTS
- 2 cup foxtail millet | thinai
- 1/2 cup urad dal
- 1/4 tsp fenugreek seeds
- salt as needed
- water as needed
PROCEDURE
- in a mixing bowl, add foxtail millet
- wash thoroughly in running water for 3-5 times
- soak in water for overnight
- in another mixing bowl, add urad dal
- wash thoroughly in running water for 3-5 times
- add fenugreek seeds in urad dal
- soak in water for overnight
- add urad dal in wet grinder
- grind to a smooth, light and fluffy batter, sprinkle water at regular intervals
- wipe and transfer to a storage container
- now add soaked millets in the wet grinder
- grind millets to a slight thin paste, by adding little water
- tranfer the millet batter into the urad dal batter
- add salt
- mix well
- cover and ferment in warm area for 12-18 hours
- after 12-18 hours, you can see the raised fermented batter
- mix well
- now grease the idli plate with little oil
- pour one ladle full of batter in each hole
- cover and cook for 10-15 minutes
- remove idli from the pan
- serve hot with any chutney
- similarly, we can make dosa from this batter
- for crispy dosa, use cast iron pan. Take one ladle full of batter in a bowl, add little water, mix well and pour it in the center of the pan and spread it in a circular motion.
- cook for 1-2 minutes
- drizzle a tsp of oil around the dosa
- after a minute, flip over to other side and cook evenly
- serve with any chutney of your choice
- tastes good.

Take foxtail millet in a bowl
Take foxtail millet in a bowl
take urad dal in another bowl
add fenugreek seeds, wash and soak in water for overnight
wash millet and soak in water for overnight
add soaked urad dal in wet grinder
grind urad dal to a smooth, light and fluffy batter, sprinkle water at regular intervals
wipe and transfer the urad dal batter into a container. add soaked foxtail millet into wet grinder
grind to a slight coarse batter, not too coarse not too thin
wipe and transfer foxtail millet batter into urad dal batter, add salt
mix well, cover and ferment in warm area for 12-18 hours
fermented foxtail millet batter ready
grease idli plate with a tsp of oil
pour one ladle full of batter, cover and cook for 10-12 minutes
Thinai Idli Ready
serve with any chutney of your choice
Heat a cast iron pan, take one ladle full of batter in the center of the pan and spread it in a circular motion, drizzle a tsp of oil
once color changes, flip over to otherside of the pan and cook till done
