DAL CURRY | PARUPPU KUZHAMBU | STARTUP COOKING
Paruppu kuzhambu or andhra dal curry is a simple south Indian dal dish, which is healthy, protein rich and easy to make. This is one pot curry that can be prepared under 20 minutes using a pressure cooker. This recipe is our family traditional recipe, we used to cook every week. This dal curry is very delicious when mixed with hot rice and a tsp of ghee on top.

RECIPE FOR PARUPPU KUZHAMBU

INGREDIENTS
- 1/2 cup toor dal
- 1/2 onion (roughly chopped)
- 1/2 tomato (roughly chopped)
- 1 garlic
- 1 inch piece of tamarind
- 1/8 tsp turmeric powder
- 1 tsp red chilli powder
- 1/4 tsp hing (asafoetida)
- salt as needed
- water as needed
- 1 1/2 tbsp sesame oil
- 1 tsp thalippu vadagam (sun dried onion seasoning vadagam)
- 1 spring curry leaves

PROCEDURE
- in a small bowl, add toor dal, rinse well with running water
- now add roughly chopped onion, tomato, garlic, tamarind, turmeric powder, red chilli powder, hing, salt and water
- mix well and close with lid
- place the bowl in the pressure cooker and pressure cook for 5 whistles
- blend the dal using hand blender or mixer grinder
- heat oil in a cast iron pan and temper with thalippu vadagam and then add curry leaves
- saute for few seconds and then switch off the flame
- now add this seasoning mix into the cooked dal
- mix well and allow the mixture to boil for 1-2 minutes and then switch off the flame
- serve hot with rice on top with a tsp of ghee and appalam
- this recipe is simple and delicious

NOTES
- you can also do seasoning with a tsp of ghee instead of oil
- adjust spice level according to your taste, here i used spicy variety of chilli powder
- if you dont have thalippu vadagam, season with mustard seeds, urad dal, cumin seeds and hing
DAL CURRY STEP-BY-STEP PHOTO RECIPE
Take toor dal in a small vessel
wash thoroughly with water
add roughly chopped onion
add roughly chopped tomato
add garlic
add tamarind
add turmeric powder
add red chilli powder
add water as needed to soak toor dal
add salt
mix well
close with lid
pressure cook for 5 whistles
dal ready
blend well using hand blender
blended well
heat oil in a cast iron wok
add thalipu vadagam
add curry leaves
seasoning ready
add seasoning into dal mixture
allow the curry to boil for 1-2 minutes and then switch off the flame
serve hot with steamed rice with appalam
