Baby potato fry is simple, spicy and delicious recipe. This recipe is basically a dry version. Potatoes are cooked with only spice powders, no onion, no tomato and no garlic. RECIPE FOR BABY POTATO FRY

INGREDIENTS
- 17 baby potato (small potato)
- 1/4 tsp mustard seeds
- 1/2 tsp urad dal
- 1/4 tsp hing (asafoetida)
- 10-12 curry leaves
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- salt as needed
- 8 curry leaves for garnish
PROCEDURE
- Pressure cook baby potatoes with enough water for 2 whistles.
- peel off the skin and keep it aside.
- heat oil in a cast iron pan
- add mustard seeds, allowed to crackle
- add urad dal and hing (asafoetida)
- saute till it turns golden brown
- add curry leaves
- add all the spice powders, turmeric powder, red chilli powder, coriander powder, cumin powder and salt
- mix well
- add boiled baby potatoes
- combine altogether, like all spice powders coated well with baby potatoes
- cover and cook in low medium flame for 15 minutes
- sprinkle some water for every 5 minutes
- toss well
- finally garnish with curry leaves
- mix and serve with rice, chapathi or roti

BABY POTATO FRY STEP - BY - STEP PHOTO RECIPE
Take 17 baby potatoes with enough water in pressure cooker
pressure cook for 2 whistles
boiled potatoes
peel off the skin
heat oil in a cast iron pan and add mustard seeds
add urad dal
add hing (asafoetida)
saute till dal turns golden brown
add curry leaves
add turmeric powder
add chilli powder
add cumin powder
add coriander powder
add salt
mix well
add boiled baby potatoes
combine well
cover and cook in low medium flame for 15 minutes
sprinkle water for every 5 minutes, cover and cook again
garnish with curry leaves
mix well and serve with rice, chapathi and roti
