RECIPE FOR AVARAKKAI PORIYAL | BROAD BEANS STIR FRY

INGREDIENTS
- 400 g avarakkai or broad beans
- 1 tbsp sesame oil
- 1/4 tsp mustard seeds
- 1/4 tsp urad dal
- pinch of hing (asafoetida)
- 1/8 tsp cumin seeds
- 6 curry leaves
- 2 green chillies (split)
- 1/4 cup onion (finely chopped)
- salt as needed
- water as needed
- 2 tbsp grated coconut
PROCEDURE
- cut both the ends of broad beans and discard the ends
- remove the string on both the sides and discard it (see the picture below)
- wash thoroughly in running water
- soak the broad beans in water for 10 minutes
- chop the broad beans and keep it aside
- heat sesame oil in a cast iron pan
- add mustard seeds, urad dal, hing and cumin seeds
- saute for a while
- add curry leaves and green chillies
- saute for a while
- add chopped onion
- saute well till onion become translucent, no need to fry longer period of time
- add chopped broad beans | avarakkai
- mix well
- add salt
- stir fry in low medium flame for 5 minutes or till the raw smell goes off
- add 3/4th cup of water
- cover and cook in medium flame or till the water evaporated completely
- broad beans will become tender now
- add grated coconut
- mix well
- cook in low flame for 2-3 minutes
- remove from flame
- enjoy

take broad beans in a bowl
cut both the ends, remove the strings and discard
soak broad beans in water for 10 minutes
chop all the broad beans
heat oil in a cast iron pan
add mustard seeds, urad dal, hing and cumin seeds
saute for a while
add slited green chillies and curry leaves
add chopped onions
saute well till onion become translucent
add chopped broad beans
mix well and add salt
stir fry in medium flame for 5-8 minutes or till the raw smell goes off completely
add required amount of water
cover and cook in low medium flame (approx 12 minutes)
water evaporated completely
add grated coconut
mix well and cook for 2 minutes
serve hot
