Thinai Adai recipe is a South Indian delicacy which is a very good breakfast option for everyone. It is made with foxtail millet, lentils, red chillies, shallots, green chillies and coriander leaves. It goes well with Aviyal, jaggery, coconut chutney, tomato chutney, etc.,
Thinai Adai is a delicious protein rich pancake, popularly made in Tamil Nadu, especially in Tanjavur district and it is almost similar to regular dosa. This is purely a vegan and gluten free recipe, hence it can be consumed by everyone.

Side Effects - Millets are sage when consumed in a moderate amount. However, excessive consumption of millet might cause an adverse effect. Millets contain goitrogen, a substance that interferes with the production of thyroid hormones and inhibits iodine uptake and utilization by the thyroid gland. Deficiency of iodine is a significant health problem which leads to the development of enlarged thyroid gland, known as goitre. Goitre causes dry skin, anxiety, depression and slow thinking.
Adai is quite filling, if you have 2 at once. The texture of this adai is a little thicker than a basic dosa. This thinai adai is very easy to prepare and can be made in few hours. Foxtail Millet Adai | Thinai Adai Recipe

INGREDIENTS
- 1 cup Foxtail millet | Thinai
- 1/2 cup Toor dal
- 1/2 cup Bengal gram dal
- 1 tbsp Urad dal
- 6 Red Chillies
- Salt as needed
- 1 cup finely chopped Onion / Shallots
- 3 green chilli (chopped)
- 1/4 cup coriander leaves (chopped)
- Sesame oil - to make adai
PROCEDURE
- rinse and soak foxtail millet, toor dal, bengal gram dal and urad dal together for 5 hours
- soak red chillies in water
- after 5 hours, add soaked red chilies along with water into the blender
- pulse for few seconds
- now add soaked millets and lentils
- add little water and grind to a slight coarse paste
- consistency of the batter should neither be too thick nor too thin
- transfer the batter into bowl or box
- add salt and mix well
- allow the batter to ferment for 2-3 hours
- once the batter is fermented, mix the batter well
- add chopped onions, green chilies and coriander leaves
- mix well
- heat a tawa, pour a ladle full of batter and spread it in a circular motion
- drizzle a tsp of oil around the adai and cook for 2-3 minutes
- once the edges turns color, flip over to other side and cook evenly
- remove from tawa and serve hot with any coconut chutney or tomato chutney
- absolutely tasty and delicious
Note: we can add finely chopped coconut, curry leaves and ginger to the adai batter to make it more delicious. In the actual recipe, they won't ferment the batter, but i personally recommend to ferment and then start to make adai.

Thinai Adai With Step By Step Photo Recipe
take foxtail millet, toor dal, bengal gram dal and urad dal
rinse and soak in enough water for 5 hours
soak red chillies in water
add soaked red chillies along with water into the blender
pulse for few seconds
add soaked millets and lentils
add little water and grind to a slight coarse paste
add salt and mix well
allow to ferment for 2-3 hours
mix well
add chopped onion, green chilli and coriander leaves
mix well
heat a cast iron pan, pour a ladle full of batter and spread slightly into a circular motion, drizzle with a tsp of oil, cook on low medium flame
once the base turns light brown flip over to other side and cook evenly
serve this hot thinai adai with coconut chutney and tomato chuntey
