RECIPE FOR CHETTINAD KARA CHUTNEY

INGREDIENTS
- 2 onion - medium size
- 2 tomato - medium size
- 8 garlic
- 8 red chilli
- 1 inch tamarind
- 1 tbsp jaggery
- 1 tsp hing/asafoetida
- salt to taste
- 1/2 cup water
- 1/4 cup sesame oil
PROCEDURE
- add onion, tomato, garlic, red chilli, tamarind, jaggery, hing, salt and salt in to the pressure cooker
- pressure cook for 3-5 whistles
- switch off the flame and release the pressure manually
- cool the mixture completely before grinding
- now add it into the mixer grinder
- grind to a fine paste without adding water.
- heat a sesame oil in the pan
- add ground paste and mix well
- cover and cook until the oil separates from the chutney
- cool down completely
- store in an airtight container
- serve this lip smacking chutney with Idly and Dosa
- delicious in taste
NOTES
- adjust spice level according to your taste
- highly recommend to use sesame oil for better taste
