A flavorful combination of coconut and jaggery is used for stuffing the modak, which gives this delicacy of delightful taste and flavour. Cardamom adds a nice flavour to this dessert recipe. RECIPE FOR MAKING MODAK

INGREDIENTS
FOR DOUGH:
- 1 cup rice flour or idiyappam flour
- 1 tsp oil
- pinch of salt
- 1 1/2 cup water
FOR STUFFING
- 1 cup jaggery
- 1 cup coconut
- 1/4 tsp cardamom powder
- 1 tsp ghee
- add half cup of water in the sauce pan
- bring it to boil
- add grated jaggery and allow to dissolve
- filter and remove impurities from jaggery
- take jaggery water in the pan
- add a tsp of ghee, grated coconut and cardamom powder
- mix well
- cook on low medium flame until jaggery starts to thicken
- switch off the flame and allowed to cool completely
- make small balls and keep it aside
- in another pan, add water
- add a tsp of oil and a cup of rice flour or idiyappam flour slowly
- mix well and without the formation of lumps
- cook on low flame
- add a pinch of salt
- stir frequently
- cook until it thickens
- switch off the flame
- allow to cool completely
- mix and make a smooth dough, the dough should not be too tight.
- make a small ball from the dough
- now modak dough and stuffing is ready
- In the modak mold, grease with oil add a dough ball
- press gently to all sides of the mold
- add coconut-jaggery filling, close the edges of the dough by using your hands.
- gently open the modak from the mold
- place all the modak in steamer
- cover with lid
- steam for 10 - 15 minutes
- once done, transfer these little delights on a serving plate
- Serve and enjoy with your kids and family
