KUZHI PANIYARAM | MASALA PANIYARAM | KARA PANIYARAM
Masala Paniyaram or Kuzhipaniyaram are made from Idly Dosa batter. When the batter becomes sour, that is the right consistency. It's a very simple recipe which can be made without any prior preparation. A special pan is needed to make paniyaram and its called as Paniyaram Chatti. This special cookware has moulds in it, now this pan is easily available in all Indian grocery stores and online stores like amazon. This pan comes with Iron and non-stick surface. I would suggest to go for Iron cookware for more healthy, crispy and tasty.

RECIPE OF MASALA KUZHI PANIYARAM

INGREDIENTS
- 2 tbsp oil
- 1 tsp mustard seeds
- 1.5 tsp urad dal
- 1 tbsp bengal gram
- 2 green chilli (finely chopped)
- 1 inch ginger (finely chopped)
- few curry leaves (chopped)
- few coriander leaves (chopped)
- salt as needed
- 2 cup Idli batter
PROCEDURE
- Heat oil in a pan
- add mustard seeds
- allow to crackle
- add urad dal and bengal gram dal
- saute for a minute until dal turns light golden brown
- add finely chopped green chilli, ginger, curry leaves and coriander leaves
- add finely chopped onion
- saute until onion turns pink color
- add salt
- mix well
- switch off the flame
- allow to cool at room temperature
- in a mixing bowl, add idly batter
- add fried onion masala into batter
- mix well
- now Paniyaram batter ready
- Heat paniyaram pan
- add 2 drops of oil in each hole
- add a tbsp of batter in each hole
- close with lid
- cook on medium flame for 3-4 minutes
- flip over paniyaram to other side using rod or tooth pick
- close the lid, cook other side for 2-3 minutes
- Paniyaram Ready
- serve hot with coconut chutney or tomato chutney
