Peanut chutney is a super, creamy, slightly sweet, mildly spiced, served with idly or dosa and a very popular recipe from the southern India. This peanut chutney is made with roasted peanuts; spiced with red chilli and kick of tanginess from the tamarind; all blended together smoothly and added with a nice seasoning mixture made of mustard seeds, crunchiness from uraddal and fresh flavors of curry leaves in to this super awesome dish that would tempt you eat the chutney just like that.
Myself and my son are pretty much in love with peanut recipes, peanut chutney is one among them. And as always, this chutney is quick and easy. If you want, make a large batch, and keep it for a few days in the refrigerator so that you can enjoy with your south Indian breakfast every day.

Recipe for Peanut Chutney

INGREDIENTS
- 1 cup raw peanut
- 3 red chilli
- 1 inch tamarind
- 1/2 cup water to grind
- 1 tsp mustard seed
- 1 tsp urad dal
- hing a pinch
- few curry leaves
- salt as needed
- oil for seasoning
PROCEDURE
- In a pan, add a cup of raw peanut.
- dry roast peanuts till skin separates from peanuts.
- transfer to mixer grinder
- fry red chilli
- transfer to mixer grinder
- add a piece of tamarind
- add required amount of water
- add salt
- grind to a smooth paste.
- transferred to a serving bowl
- add oil for seasoning
- add mustard seed, allow to crackle
- add uraddal, wait till changes color
- add hing, curry leaves
- add seasoning over the peanut chutney
- serve as a side dish with Idly, Dosa, Upma or Pongal.
Notes: This chutney can be stored for a couple of days in refrigerator. This chutney taste awesome when ground in traditional mortar and pestle.
Health Tips: Peanuts are a very good source of mono-unsaturated fats, the type of that is emphasized in the heart-healthy diet. Peanuts are a good source of vitamin E, niacin, folate, protein and manganese.
