Garam Masala Powder Recipe - Startup Cooking
Garam masala is a blend of ground spices used extensively in Indian cuisine. The spices for garam masala are usually roasted to bring out more flavor and aroma. The word masala simply means "spices," and garam means "hot". Garam masala is very pungent but not as hot as chilli powder. This is a popular spice mix in all Indian recipes. It can be stored in air tight container to keep the flavors intact for 1 or 2 months.
Garam masala also known as the soul of Indian food and is basically a melange of Indian spices that is used in both vegetarian and non-vegetarian dishes. The magic lies in the aroma of the spices that altogether enhance the taste of the dish. Now a days, readymade garam masala packets are easily available, but it is always good to use homemade ones, as it is far more effective.
Garam masala is full of phytonutrients and antioxidants, garam masala improves digestion by releasing gastric juices in the stomach and also boosts metabolism. Use of cloves and cardamom makes it a natural catalyst to fight bad breath, also it helps fight inflammation and protects from skin diseases.

RECIPE FOR GARAM MASALA

- 2 tbsp coriander seeds
- 2 tbsp pepper corn
- 2 tbsp cumin seeds
- 4 tbsp fennel seeds
- 8 mace
- 16 star anise
- 25 cardamom pods
- 2 tbsp cloves
- 10 small cinnamon sticks
- 5 bay leaf
PROCEDURE
- add all the ingredients like coriander seeds, pepper corns, cumin seeds, fennel seeds, mace, star anise, cardamom, cloves, cinnamon stick and bay leaves in the dry pan
- dry roast on low flame until it is hot to touch
- transfer to a plate and allowed to cool down completely
- once it cools, transfer in to a mixer grinder
- grind to a smooth fine powder or slight coarse powder
- store in an air tight container and use it when required

NOTES
- for best results, weigh the spices on a scale
- here i am not using the black cardamom because it gives a very pungent taste and flavor

add all the ingredients in the dry pan

once it cools down transfer into a mixer grinder
grind to a fine or slight coarse powder
